Traditional Dakos

Ingredients
3 barley rusks
Salvation olive oil to taste
1 large, ripe tomato, skinned
100gr feta cheese cut into pieces
Dried oregano
Capers from a jar
A few stoned olives
Coarse salt
Pepper

Instructions
Cut the tomato up into very small pieces (do not grate) and rinse the capers well to remove the brine. Moisten the rusks a little so that they are still crispy, but are simply a little softer and place them in a deep dish. Add the finely-cut tomato (to cover everything), salt, freshly-ground pepper and a little olive oil. Crumble on the feta cheese by hand and add the capers, olives and oregano. Sprinkle with olive oil.
