Octopus in wine with honey

1 kg cleaned octopus
3/4 cup Salvation olive oil
1 orange cut into slices with pith removed
½ cup of olive (or less, depending on personal preference)
1 cup red dry wine
1 glass hot water
Zest from 1 orange
2-3 cloves
5-6 juniper berries
1 teaspoon black pepper grains coarsely ground
2 bay leaves
1 sprig of fresh thyme or 1 teaspoon dried thyme
1 teaspoon dried oregano

Simmer the octopus for 35 minutes. Turn the octopus every 10 minutes so that its juices come out. Add all of the aromatic herbs and turn up the heat to medium-high, until the octopus starts to boil. Add the water, the olive oil, the orange slices with the zest, and the wine, and boil so that the sauce begins to thicken. When the sauce is about to thicken completely, add the honey. When the honey has also been mixed into the sauce, it is time to serve. Sprinkle with olive oil and oregano.
